Turkey Escalopes

Ingredients

  • 4 turkey escalopes, approx 1½” thick
  • 4 slices lean cooked ham
  • 4 slices gruyere cheese
  • 6oz button mushrooms
  • 3oz unsalted butter
  • Flour
  • 1 tbsp olive oil
  • black pepper
  • 2 tbsp fresh chopped parsley
  • 4-6tbsp hot stock
  • Watercress (for garnish)

Method

  1. Trim and slice mushrooms, fry in ½oz butter and set them aside. Coat turkey in seasoned flour.
  2. Melt remaining butter and oil in large frying pan. Fry the escalopes for 5 mins each side.
  3. Transfer escalopes to a rectangular ovenproof dish. Place a slice of ham on each escalope, spoon over a thin layer of mushrooms, season with ground pepper.
  4. Sprinkle parsley over mushrooms and cover with a slice of cheese. Pour the hot stock over the escalopes.
  5. Cover dish with foil and bake in a moderate oven for 45 mins or until cheese melted and turkey cooked.
  6. Lift out escalopes and arrange on a hot serving dish. Garnish with parsley and watercress.
  7. Serve with corn fritters, a dish of buttered noodles and a green salad.
