Roast turkey legs with stuffing balls

Ingredients

  • 4oz white breadcrumbs
  • 2oz suet or margarine
  • 1 tbsp finely chopped parsley
  • 1 teaspoon thyme
  • Grated rind of ½ lemon
  • Salt and pepper
  • Beaten egg to bind

or

  • ½lb sausage meat
  • ½ pkt sage and onion stuffing mixed with water
  • 4 small turkey legs

Instructions

  1. Make up the stuffing and roll into 4 balls.
  2. Place turkey legs in a roasting tin with lid, season lightly and dot with butter over the skin.
  3. Roast in the middle of a hot oven 200ºC for one hour, basting occasionally.
  4. Remove lid and return to the oven for 20-30 minutes to brown.
  5. Place the stuffing on a baking tray and put near to top of the oven for 20-30 minutes.
  6. Use juices from the turkey to make gravy.

(Good served with roasted winter vegetables eg potatoes, suede, parsnips, red onion)
