Roast turkey legs with stuffing balls
Ingredients
- 4oz white breadcrumbs
- 2oz suet or margarine
- 1 tbsp finely chopped parsley
- 1 teaspoon thyme
- Grated rind of ½ lemon
- Salt and pepper
- Beaten egg to bind
or
- ½lb sausage meat
- ½ pkt sage and onion stuffing mixed with water
- 4 small turkey legs
Instructions
- Make up the stuffing and roll into 4 balls.
- Place turkey legs in a roasting tin with lid, season lightly and dot with butter over the skin.
- Roast in the middle of a hot oven 200ºC for one hour, basting occasionally.
- Remove lid and return to the oven for 20-30 minutes to brown.
- Place the stuffing on a baking tray and put near to top of the oven for 20-30 minutes.
- Use juices from the turkey to make gravy.
(Good served with roasted winter vegetables eg potatoes, suede, parsnips, red onion)
