Turkey Leg Saté

Ingredients

  • 1 medium onion
  • 2 tbsp ground coriander seed
  • 1 tablespoon soft light-brown sugar
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder
  • Pinch ground red pepper
  • 3 tbsp fresh lemon juice
  • 4 tbsp soy sauce

  • 2 turkey legs
  • 2 dsp olive oil

Instructions

  1. Combine the first 9 ingredients in a bowl.
  2. Cut deep slashes into the turkey legs and add to marinade.
  3. Cover and refrigerate 10-12 hrs or overnight.
  4. When ready to cook, line a baking dish with foil, place the turkey legs and marinade in the dish, put a dessertspoon of oil over each leg and cover the legs lightly with the foil.
  5. Bake in a preheated hot oven 200°C for 1hr, then open up the foil and bake for a further 20-30mins basting now and again.
  6. Serve with cooked rice and rocket salad.
